If you like your oats in the morning as much as I do, try this recipe! This delicious recipe is a great breakfast treat, full of slow digesting carbs and healthy fats. Pumpkin contains a synergistic blend of phytonutrients, rich in carotenoids.
Instructions:
In a small pot, bring almond milk and water to a boil over medium heat. Add the oats, cinnamon, and nutmeg. Reduce heat to low/medium and simmer until liquid is absorbed, stirring occasionally. Once the oatmeal has thickened, stir in pumpkin, pecans, and liquid stevia. In a separate bowl, combine 1/4 cup of water with whey protein and mix until protein powder is well dissolved. Pour the protein mixture over oatmeal and enjoy! Serves 1 portion.
