Pesto Chicken and Zucchini Pasta

Pesto Chicken Strips with Zucchini Pasta (Serves 2)

Are you getting tired of eating chicken all the time?  Experimenting with new recipes keeps it exciting and allows you to stay motivated to eat clean!  Here is one of my favorite low carb dinner recipes.  Not only is it delicious, but it has balanced protein, carbs, and healthy fats. 

Pesto Chicken Strips

Ingredients:

  • 8 oz. boneless, skinless chicken breast
  • 1 oz. basil leaves
  • 2 tsp. extra virgin olive oil
  • 1 tbsp. parmesan cheese
  • ½ tsp. freshly grounded black pepper
  • 2 tbsp.sliced black olives
  • ½ tsp. cayenne pepper
  • pinch of himalayan Salt
  • coconut oil cooking spray

Directions:

  1. Cut Chicken Breast into thin slices.
  2. Heat pan over medium heat and spray the pan with Coconut Oil spray.  Add chicken strips.
  3. Cook the chicken strips with a lid on the pan until the chicken is done.
  4. In a food processor blend basil, olive oil, cheese and seasonings to get a paste like consistency.
  5. Place chicken in a bowl and mix in the pesto sauce.  If you really don’t have the time to make the pesto sauce, you can always buy a premade pesto sauce.  Remember that store bought pesto sauces can be extremely high in calories so be sure to check the label or use it sparingly!

Zucchini Pasta Noodles

One of my favorite replacements for Pasta is Zucchini Pasta. It’s low carb and guilt free!  I discovered this recipe when I was in Nicaragua earlier this year at a fantastic raw food restaurant.  When I returned from my travels I invested in a spiralizer.  I make my zucchini pasta with raw zucchini noodles. 

Ingredients

  • 2 large zucchinis spirialized (you will need a spirializer for this). I like to use one green and one yellow zucchini for more colour.
  • 1 red pepper
  • ½ an avocado
  • 1 roma tomato
  • 1 clove of garlic, minced
  • 1 cup spaghetti sauce (your preference)
  • ⅛ teaspoon dried oregano
  • himalayan salt and fresh ground pepper to taste
  • 1 tablespoon basil, chopped

Directions: 

  1. Cut up the zucchini using a spiralizer.
  2. Add 1 chopped red pepper, 1 diced roma tomato, ½ an avocado, and 2 tbsp. sliced black olives to the mix.
  3. Add the spaghetti sauce, dried oregano, minced garlic and basil.  Taste the pasta and add salt and pepper as desired.
  4. Add the pesto chicken to the pasta and enjoy!
