OK!! Here it is....my all time favourite protein recipe which is good hot or cold.....on the go or in a nice fancy dinner. Originated by the gorgeous Jaime Eason however I've added my subtle touch. We will call these Shanski muffins!
- 2 Eggs and 2 Egg Whites
- 2 lbs Extra lean ground turkey
- 1/2 tsp Cumin
- 2 tbsp chopped garlic (minced)
- 2 tsp dry yellow mustard
- 2 tsp black pepper
- 2 tsp Ms. Dash
- 2 tsp chipotle powder
- 1 tsp himilayan salt
- 1 tsp pepper
- 2 Celery Stalks and 1 small onion shopped up very finely
Instructions: First preheat the oven to 375 degrees. Next, Spray the muffin pan with coconut oil spray. Mix all your ingredients together in one large bowl until everything is blended together well. Roll the mixture into small balls and place in the muffin pan. Muffins should be about 2oz per muffin. Bake for 40 minutes and Enjoy! Take them on the go for lunch or add them to salads! They are delicious! I usually dip them in mustard or another low calorie option for fun. Hope you like them!
